Everyday Grain Bowl

Serves 4

This hearty, delicious salad will leave you feeling satisfied and energized. It can be modified a thousand different ways, and adapted to suit whatever you have in your fridge. We like to use Glory Bowl dressing from Whitewater Cooks, but you can easily substitute for any dressing. And the great thing is, any sausage can be used in this meal! We’ve used our Apple & Pork sausages, but here are some modifications you can try as well:

  • Sweet and Sour Pork with peanut dressing and cilantro
  • Mediterranean Lamb with balsamic vinaigrette, olives, cucumber, tomatoes, parsley, and feta cheese
  • Steak and Mushroom with dijon vinaigrette, blue cheese, red onion, cherry tomatoes, and roasted potato

Ingredients

  • For the bowl:
  • 1 cup uncooked grain of choice (rice, quinoa, farro, millet…)
  • OR substitute 4 cups roasted potatoes and/or yams instead of grains
  • 6 cups fresh chopped greens of your choice (lettuce, spinach, arugula, kale)
  • 1 cup grated beets
  • 1 cup grated carrots
  • Goat feta cheese
  • Goji berries
  • 1 cup shredded red cabbage
  • 1 medium onion, sliced
  • 1 tablespoon butter or oil
  • 1 pack of cooked Stapleton Sausage (Pork and Apple pictured)
  • Black sesame seeds (for serving)
  • For the dressing:
  • 1/2 cup nutritional yeast flakes
  • 1/3 cup water
  • 1/3 cup tamari or soy sauce
  • 1/3 cup apple cider vinegar
  • 2 cloves garlic, crushed
  • 1 1/2 cups olive oil
  • 2 tbsp tahini paste

Instructions

  • Prepare your rice or grain and set aside
  • Pan fry or BBQ your favourite flavour of Stapleton sausage
  • Heat oil or butter in a pan or skillet at medium to medium high heat, add onions and a pinch of salt and cook for about 10 mins until soft, stirring occasionally.
  • Combine nutritional yeast flakes, water, tamari or soy sauce, apple cider vinegar, tahini and crushed garlic in a blender to prepare the dressing.
  • Add oil in a steady stream, as you are blending. There will be leftover dressing to use again.
  • Assemble the bowls by placing grains into 4 bowls, top with lettuce. Arrange the vegetables on top, followed by sliced Stapleton sausage. Drizzle the dressing over top of the salad. Sprinkle black sesame seeds for garnish. Serve immediately.
